[徽菜]椿芽焖蛋
安徽太和县的香椿芽是地方特产,质地鲜嫩,芳香浓郁。据传早在唐朝时即已成“贡品”,明清两朝已闻名全国,是安徽出口商品之一。
椿芽焖蛋是太和县的传统风味,将椿芽包于蛋液之中,经小火焖制,使椿芽的芳香留于蛋内,品浓香诱人,脆嫩爽口。

Steps to make [徽菜]椿芽焖蛋

  • 1.原料:土鸡蛋三只,香椿嫩头一小把。
  • 2.土鸡蛋磕入干净的豌内。
  • 3.放入半勺盐搅打至蛋液起泡沫备用。
  • 4.将净椿芽放入开水碗里,盖严碗盖,约烫3分钟取出,沥干水分,切成碎未。(我这是从妈妈家带来的,事先汆水,放入冰箱只需解冻即可。)
  • 5.平地锅置旺火,放入一勺熟猪油。
  • 6.烧至五成热,将鸡蛋倒入锅内。
  • 7.趁鸡蛋未熟时,将椿芽放在蛋中间。
  • 8.用筷子将四周鸡蛋向中心折迭,使鸡蛋液包住椿芽。
  • 9.颠勺翻身,关火余温焖5分钟左右至熟即可。
