  • 澄粉35克
  • 白砂糖25克
  • 炼乳40克
  • 牛奶200克
  • 玉米油30克
  • 南瓜桂花馅300克
  • 手粉适量(炒熟的糯米粉)

Steps to make 南瓜桂花冰皮月饼

  • 1.所有冰皮材料准备好
  • 2.牛奶、炼乳、玉米油入盆,混合均匀
  • 3.所有粉类入盆中,与液体混合均匀
  • 4.过筛两次,去除杂质
  • 5.蒙上保鲜膜,入蒸锅,大火约30分钟左右,中途可打开锅盖,用筷子搅拌几次,防止面糊沉淀,同时也加速面糊蒸熟
  • 6.出锅后用筷子迅速打散
  • 7.稍凉后,用手揉成光滑的面团,可入冰箱冷藏一小时再使用

  • 9.取一块冰皮面团,再取同量的南瓜桂花馅,混合成一个南瓜面团(做花芯用)
  • 10.将冰皮面团和南瓜桂花馅以1:1的比例分成11份
  • 11.50克模具准备好,模具内撒一层手粉,然后倒扣,抖掉多余的粉;取南瓜面团一小块,放在花芯处
  • 12.取一份冰皮面团,用手压成薄片,再整理成小碗状
  • 13.将南瓜桂花馅放在冰皮内
  • 14.捏成一个圆球
  • 15.放入模具中
  • 16.模具倒扣在容量中,轻轻按压两下,然后脱模
  • 17.冰箱冷藏4小时以上再食用,口感更佳哟
