春笋回锅肉

Steps to make 春笋回锅肉

  • 1.锅里放水,将多半根葱切成段放入锅中,(剩下的葱切末备用)放入姜片、花椒和八角。
  • 2.将洗净的五花肉放入锅中煮至用筷子可以穿透。
  • 3.将煮好的五花肉捞出控干水分,晾凉
  • 4.将笋切成片
  • 5.锅内烧开水,将笋片放入焯水
  • 6.将焯好的笋片捞出,在凉水中浸泡一会。
  • 7.锅内放少量油,放入葱末煸炒出香味(五花肉放入后会出油,所以这里油不要放太多)
  • 8.放入五花肉翻炒至肥肉透明。
  • 9.加入一小勺生抽和一大勺郫县豆瓣酱继续翻炒。
  • 10.放入笋与肉片翻炒均匀,加入少许鸡精,出锅。
