珍珠烩双菇

Steps to make 珍珠烩双菇

  • 1.将鹌鹑蛋洗净、放进冷水锅中用中火焐熟。
  • 2.将鹌鹑蛋剥去壳,用半小勺盐和麻油腌一下,使它有基本的咸味。
  • 3.草菇洗净后,放入开水锅中焯至断生。
  • 4.捞出后浸在冷水中。
  • 5.灌装蘑菇倒出后漂清防腐水,改刀切成小块。
  • 6.锅内放一大碗鲜汤。
  • 7.放入鹌鹑蛋、草菇、蘑菇、一小勺盐、一小勺糖和一小勺鸡精。
  • 8.盖上锅盖烧沸后转小火略焖10分钟至入味。
  • 9.下水淀粉勾芡,使卤汁粘稠即可。
