  • 虾油一碗
  • 料酒一汤匙

Steps to make 奇香熏带鱼

  • 1.带鱼一条,刮去外面一层白色的皮,划一字刀,用盐,胡椒粉,一汤匙料酒腌渍待用。
  • 2.制作虾油,盛起待用。
  • 3.锅上烧油,小火炒香所有配料。
  • 4.兑高汤一碗,花雕酒一碗(黄酒也可以)糖一汤匙,盐一茶匙,烧开小火炖两分钟后放味精和半汤匙白酒稍开倒出凉凉。
  • 5.腌好的带鱼拍上干淀粉,要拍均匀。
  • 6.油七成热炸带鱼,油要淹没带鱼为好。
  • 7.带鱼微黄,下腐竹炸到金黄。
  • 8.趁热捞出泡在准备好的汁水中。这样放置二十分钟以上即可。
  • 9.放时间长回更入味。
