吃惯了咸口的粽子,今年来点不一样的。这款粽子彻底打破传统,芋泥加紫薯的神奇搭配绝对惊艳您的味蕾,包裹着红彤彤的咸蛋黄,一口吃下去真的香呀~

  • 1.准备材料。新鲜宽粽叶清洗干净(根部可以剪掉一点点尖角),荔浦芋头和紫薯处理成薄片后上蒸锅蒸15-20分钟蒸熟。咸鸭蛋黄是新鲜现敲的。
  • 2.蛋黄一定要去干净蛋黄表面黏的那层膜(不然会很腥),排入垫了油纸的烤盘,喷上适量白酒去腥。

  • 4.蒸熟的芋头和紫薯压成泥。
  • 5.取1/3芋泥和紫薯泥混合均匀。如果比较干,可以加一点点牛奶调节。
  • 6.粽叶两张反向叠起,比较毛的两面贴合,宽的部位在两头。右边1/3处往里折成漏斗型。
  • 7.底部填入芋泥,中间加一个烤熟的咸蛋黄。
  • 8.上面填上芋泥紫薯混合馅料。压平,不要超过粽叶边。
  • 9.右手把突出那部分粽叶贴着馅料,盖住馅料。左右两边往下压紧。
  • 10.顶部多出的部分粽叶,往一边折过去贴合就好,一个手指压住线,一圈一圈把粽子裹住就可以啦!
