栗子芸豆冰皮月饼

Steps to make 栗子芸豆冰皮月饼

  • 1.白芸豆提前一天泡水,泡开后去皮
  • 2.蒸锅蒸25分钟左右,勺子可压成泥后出锅放凉
  • 3.用勺子按压成泥,这项工作非常耗时费力。我用的破壁机打成豆沙过筛,加入20g糖,或者适量蜂蜜至甜味适中。我是糖和蜂蜜都加了,调至甜度适中。
  • 4.澄粉和20g糯米粉混合,牛奶加20g糖溶化后加入混合粉中搅拌均匀
  • 5.搅拌均匀后上锅蒸20分钟,蒸一会儿搅拌一下,到后面要多搅动,避免生熟不均
  • 6.蒸的时候,可以将剩余的糯米粉放入不粘锅中炒至微黄,有熟面粉香气时关火备用
  • 7.蒸好的冰皮分成两份,一份放到撒了熟糯米粉的案板上,一份加入少量牛奶融化的红曲粉揉匀
  • 8.蒸好的冰皮分别揉成面团,分成20g左右的小面团
  • 9.20g左右芸豆馅中加一个糖水栗子包成球型
  • 10.做好的冰皮和包好栗子的馅。先做好馅再分冰皮,避免时间长冰皮变干
  • 11.冰皮擀成圆形放入芸豆馅,用虎口慢慢收口,揉成圆形
  • 12.将两种颜色的冰皮叠在一起,包上芸豆馅
  • 13.在沾粉中滚一下
  • 14.滚上沾粉放入撒了少量沾粉的模具中,稍微压实
  • 15.慢慢退模,一定要压到底,轻轻一拿就下来了。切勿往外拽,会变形。
  • 16.可以将一种颜色的少量冰皮先放入模具中,再将包好馅的面团顶部不要滚沾粉,放入模具压实,退模就是双色月饼。
  • 17.包了两层冰皮的月饼切开很有层次感,很漂亮!
