秘制烤鸭腿

Steps to make 秘制烤鸭腿

  • 1.将鸭腿表面的水分用厨房纸巾吸干;
  • 2. 将鸭腿放入盘中,加入适量的盐,将它先按摩一遍;
  • 3.再加入适量的烤肉酱、葱姜段、酱油、生抽等调味料,再一次帮它按摩入味;
  • 4.用叉子再鸭腿底部多扎几个孔;
  • 5. 将它放入保鲜盒中, 注意将柠檬片分层的码入鸭腿中, 盖上盖放入冰箱中冷藏,中间翻动几次;
  • 6.面粉倒入开水, 用筷子搅拌成絮状, 稍凉后用手揉成光滑的面团;
  • 7. 盖上保鲜膜, 饧上20-30分钟;
  • 8. 饧好的面团擀成大圆片;
  • 9. 利用合适直径大小的碗小刀切小圆片;
  • 10. 这样荷叶饼做好了;
  • 11.在笼屉上刷层油;
  • 12. 将圆片叠放起来,没放一张面片时要将表面刷层油;
  • 13. 烧锅开水, 加上盖, 蒸上15分钟(按做好的荷叶面皮的多少决定时间);
  • 14. 这样一张薄薄的荷叶饼就完成了;
  • 15. 腌制好的鸭腿表皮朝上的放在烤网上;
  • 16. 在烤盘中垫有锡纸,倒入适量的水,连同鸭腿一起放入预热好的烤箱190度的烤箱中;
  • 17.每15分钟将蜂蜜和白醋配制的汁刷在鸭腿表面;
  • 18. 烤制一半时用锡纸将鸭腿底部包住,防止烤糊;
  • 19. 中途需最少拿出来刷蜂蜜醋水至少三次,
  • 20.约烤50--60分钟后这秘制的烤鸭腿就完成了, 放入垫有生菜叶的盘中;
  • 21. 再准备好其它配菜:黄瓜条、大葱丝和甜面酱;
  • 22.将鸭腿肉斜片下来,小盘子装好;
  • 23. 开始享受了吧。
