羊肉苦荞面
在冬季是三高的高发季节,进补的食材中,要多加苦荞来预防,当然也少不了羊肉。羊肉味甘而不腻,性温而不燥,具有补气益血、滋养肝脏、改善血液循环的功效。再配上大枣、萝卜,味道和营养都更丰富,做一碗羊肉苦荞面,天冷的日子,吃上一碗让人从里到外暖透透,绝对寒冬必备。

  • 小麦粉400克
  • 羊肉500克
  • 白萝卜500克
  • 大枣7-8颗

Steps to make 羊肉苦荞面

  • 1.将苦荞粉和小麦粉1:4的比例和面,再醒面;
  • 2.羊肉切块用凉水浸泡1-2小时,再放入凉水锅中,烧开焯出血沫,然后取出用热水将浮沫冲洗干净;
  • 3.白萝卜去皮切成滚刀块备用;香菜、青蒜苗洗净切碎备用;
  • 4.开水,放入羊肉、姜、葱、大枣和足量的水,开大火烧开后,撇去浮沫,淋入黄酒,改小火炖1小时以上;再把白萝卜块放入锅内,大火烧开转小火继续炖30分钟左右,至萝卜软烂,加适量盐和胡椒粉调味即可;
  • 5.将面团揉至光滑,进行山西特色的拉面式做法,煮熟后,将羊肉汤淋入面内;
  • 6.上桌时,根据自己喜好再加入香菜、青蒜以及油泼辣子一起享用。
