Steps to make 圣诞蛋糕卷

  • 1.准备好所用的材料。
  • 2. 将抹茶粉放入10g热牛奶拌均匀,盖好备用。
  • 3. 将牛奶加入色拉油,搅拌均匀至乳化状态。
  • 4. 加入过筛的低筋面粉, 用切拌的手法拌均匀。
  • 5. 将拌均匀的蛋黄糊均分成两份。
  • 6.分别加入抹茶液和红丝绒液,搅拌均匀,盖好备用。
  • 7. 打发蛋白霜:蛋白加几滴柠檬汁,用打蛋器打至起粗泡后分3次加入细糖,蛋白霜打发至能拉起大弯角的中性发泡状态。
  • 8. 将打发好的蛋白霜分成两份,再分别和抹茶蛋黄糊和红丝绒蛋黄糊用翻拌的手法拌均匀。
  • 9. 将做好的红绿两份面糊分别装入两个裱花袋。
  • 10. 方形烤盘上垫上油布,将装面糊的裱花袋剪小口,从一个角开始间隔紧密的挤好两份面糊,一条红一条绿均匀的挤满。
  • 11.卡士 750烤箱,提前上下火150度预热好,烤盘放入中层烤网烘烤约30分钟。
  • 12. 烘烤结束蛋糕卷立即出炉,放置晾网几分钟后,在蛋糕卷表面盖上油纸,倒扣后撕掉油布,再虚盖上防干,晾凉。
  • 13. 准备夹馅:将淡奶油加入细糖,滴几滴朗姆酒,打发至浓稠有纹路状态。
  • 14. 台面垫油纸,蛋糕卷正面朝上,将末端斜切一下,抹上打发好的蛋糕霜,
  • 15. 蛋糕尾部用擀面杖压一下,打发好的奶油均匀抹在蛋糕上,开头位置多放一点,末端薄薄一层。最后借助擀面杖及油纸将蛋糕卷卷好,包好后冷藏定型,适当装饰后即可切件食用。
