鱼香茄子:开胃家常菜
鱼香茄子,据说是用煮鱼的方式来煮茄子,常用的配料有姜葱蒜、料酒、生抽……,各地有各地的鱼香茄子,川式做法就喜欢下豆瓣酱,而粤式的却喜欢下蚝油。
我做的鱼香茄子可能只是“小五家”的鱼香茄子,不一定正宗,但家人喜欢就好。这茄子好吃是好吃,就是味道稍微重了些,所以煮鱼香茄子时,米饭也要多煮一些,这绝对是开胃的夏日家常菜。

  • 料酒1汤匙
  • 生抽1汤匙
  • 白糖1茶匙

Steps to make 鱼香茄子:开胃家常菜

  • 1.茄子洗净,切成长3厘米左右的段。
  • 2.加盐,用手抓匀,腌制15分钟后,用清水冲洗干净。
  • 3.猪肉洗净,剁成肉糜。
  • 4.姜洗净,独蒜去皮,将姜蒜剁成姜蒜蓉。
  • 5.葱洗净,切成葱珠。
  • 6.下油(1汤匙)热锅,下茄子。
  • 7.用中火,将茄子煸炒至软,将茄子盛起待用。
  • 8.用中火,将茄子煸炒至软,将茄子盛起待用。
  • 9.原锅下油,下将蒜蓉,用中火将其煸炒出香味。
  • 10.加入猪肉糜,翻炒至断生。
  • 11.下豆瓣酱,炒出香味。
