黄金蛋饺
过年必备的蛋饺,用电饼铛做,一锅出三个,十分钟做一大盘。

Steps to make 黄金蛋饺

  • 1.猪肉馅180克、莲藕80克、鸡蛋5个、玉米淀粉1茶匙、葱末10克、姜末10克、蚝油1茶匙、生抽2茶匙、食盐少许、味精少。
  • 2.肉馅中加入葱姜末、蚝油、生抽、味精、白胡椒粉、食盐、香油充分搅拌均匀。
  • 3.莲藕去皮细细地切成小颗粒。
  • 4.切好的莲藕放入肉馅中拌匀成馅料备用。
  • 5.鸡蛋全部打入碗中,加入2茶匙水淀粉。加入水淀粉摊出来的蛋皮不容易破。
  • 6.加了水淀粉的蛋液充分搅打均匀。蛋液一定要搅打均匀,打不均匀的蛋液做出来的蛋饺会有一块块白色的蛋白,影响美观~~
  • 7.电饼铛开低档烧热,刷少许食用油,或者拿厨房纸蘸油擦一下锅,让锅里有些油,防止蛋液下锅后粘在锅上,然后开舀一勺蛋液在电饼铛中,用勺子底部划个圆圈摊开,形成一个圆形的蛋皮。基本上就是图上那种茶匙,一茶匙蛋液摊一张蛋皮。
  • 8.蛋液稍稍凝固的时候,取适量肉馅放在蛋皮上。
  • 9.用筷子夹起蛋皮盖住肉馅,形成一个半圆形饺子状。趁蛋液还没完全凝固时用筷子在蛋皮四周轻轻按压几下,让两边的蛋皮粘合在一起,然后给蛋饺翻个身让它另一面再烘一下。
  • 10.熟练后一次可以做好几个蛋饺,又快又简单,一会就一大盘子。
