Steps to make 老北京鸡肉卷

  • 1.滚水用绕圈方式倒入面粉中,用筷子搅拌成松散的小面团,接着倒入冷水,用手轻轻揉搓,和成软硬适中的面团。盖上保鲜膜,松弛30分钟。
  • 2.将松弛好的面团搓成长条状,用刮板分成10个均等的小剂子。
  • 3.用手压扁小剂子,在小面团的表面刷上一层玉米油。
  • 4.将抹过油的小面团压在另一块小面团上。
  • 5.将重叠的小面团用擀面杖轻轻擀开、橄圆擀薄。
  • 6.将面皮放入平底锅内,小火干烙。
  • 7.当面皮稍微上色后即可翻面,继续烙另一面。趁热将烙好的荷叶饼饼皮撕开成两片。
  • 8.依次把饼皮全部烙好,并折叠好整齐地摆放在盘子里。
  • 9.饼皮烙的薄薄的,成透明状,口感才好。
  • 10.将胡萝卜切丝,黄瓜切丝,鸡排切成条状。
  • 11.荷叶饼对半分成两片,在荷叶饼表面醮上蕃茄酱,铺上生菜、胡萝卜丝、黄瓜丝和切成条的鸡排,卷好,老北京鸡肉卷做好了。
