香酥美味的椰蓉面包【可可娜滋】
可可娜滋,听起来很高大上的洋气名字,其实就是许多亲们做过的椰蓉面包,是椰子的译音coconut。 椰蓉面包的配方很多,造型也五花八门。 其实大同小异, 共同的特点就是都充满着浓郁迷人滴椰香味 ~~相信象我一样迷恋这美味的亲们绝对不是少数 对不对?! 喜欢我们就约吧。。。

  • 高筋面粉210g
  • 低筋面粉56g
  • 奶粉20g
  • 细砂糖42g
  • 1/2茶匙
  • 酵母4g
  • 鸡蛋30g
  • 85g
  • 汤种84g
  • 无盐黄油22g
  • 无盐黄油30g
  • 糖粉30g
  • 全蛋30g
  • 椰蓉80g
  • 牛奶20g
  • 奶粉20g
  • 杏仁碎少许

Steps to make 香酥美味的椰蓉面包【可可娜滋】

  • 1.制做椰蓉馅:黄油加糖粉打至膨松发白
  • 2.依次加入鸡蛋、奶粉、牛奶、椰蓉混合搅匀冷藏半小时待用
  • 3.制做汤种:汤种是由面粉和水为1:5的比例配备煮至而成。84g汤种=14 g高粉+70g水因为这次汤种量少,直接在炉火上煮容易糊,所以可以采用隔水煮法,煮到面糊成透明状即可
  • 4.面团制做:将除黄油以外的材料依次放入面包机,启动和面程序20分钟
  • 5.加入黄油,继续选择和面程序20分钟
  • 6.和面结束,面团放在面包机桶内进行基础发酵
  • 7.面团发酵至2.5倍大时,基础发酵结束
  • 8.将发酵好的面团取出排气,均分割成8个小面团,椰蓉馅儿也均分成8个
  • 9.面团静置15分钟后,擀成长方形,一边压薄
  • 10.均匀的抹上椰蓉馅儿
  • 11.从一边卷起,收口捏紧,两头也需要捏紧
  • 12.从中间剖开成两半,尽量剖的均匀点,~一头需要切开,另外一头不用
  • 13.切面朝上,尽量把椰蓉馅露在上面,两条扭卷起来,尾巴处要捏紧
  • 14.装入模具中
  • 15.放置温暖湿润处进行二次发酵。二次发酵结束;表面刷蛋液,撒少许杏仁碎装饰
  • 16.烤箱180度预热10分钟,面包放中下层,烤20--30分钟左右(视自家烤箱调整时间)

  • 19.没有潜水艇模具的可以做这爱心形状或扭成麻花状后直接放烤盘上烤也是一样一样滴
