龙游小吃——猪肠(糯米肠)

Steps to make 龙游小吃——猪肠(糯米肠)

  • 1.买一幅猪肠,先摘除肠壁上的脂肪,然后用盐,面粉反复清洗干净
  • 2.正宗的龙游猪肠,里面就是纯糯米或者是糯米粉,但是我这次做加了自己的想法,拌了红豆花生和香菇粒在里面,还做了另一种辣味的里面加了芋头。所以先浸泡红豆(至少半天)花生和干香菇
  • 3.这边辣味的,芋头洗净切粒
  • 4.糯米浸泡半个小时,花生泡涨后除去外衣,香菇泡发洗净切粒,所有东西沥干水份,分一半糯米和花生红豆香菇粒放进容器
  • 5.加盐,老抽生抽白糖味精搅拌均匀,放置半小时入味
  • 6.剪一截猪肠,用棉绳绑住底部打结。然后另一头拿个漏斗把拌好的糯米塞进去。家里找不到漏斗我就剪了个矿泉水瓶子。
  • 7.不要罐的太满,煮熟后糯米发胀会撑破。罐八分满,头部也用棉绳扎紧。所有猪肠灌好放进锅里,加生姜,大蒜,茴香桂皮,料酒,盐,味精,糖,油卤煮。
  • 8.大火烧开后,小火慢煮才能入味。
  • 9.成品。辣味的
