闪电泡芙(ECLAIR),传说——闪电泡芙因为太过美味,让吃起来的人们忍不住飞快地吃完,就如同闪电般迅猛而得名。我更喜欢闪电泡芙的百变造型,可以加入各种馅料,可以在表面作各种装饰,
今天我做的是蛋奶酱的闪电泡芙,好吃哦,试试吧。

  • 低筋面粉80g
  • 鸡蛋2个
  • 黄油50g
  • 牛奶120g
  • 5g
  • 1g

Steps to make 蛋奶酱闪电泡芙

  • 1.鸡蛋打散
  • 2.牛奶、食盐、糖、黄油,一起放入煮沸离火
  • 3.倒入面粉
  • 4.快速搅拌至不粘容器的状态后取下
  • 5.分次加入蛋液,搅拌至充分吸收
  • 6.搅拌至顺滑状态,挑起呈倒三角,尖角底部约4厘米就可以了
  • 7.裱花袋装入八齿裱花嘴,放入蛋糊
  • 8.挤到模具里,大小,长短尽量均匀,可以挤长条手指形状,可以挤四个小花瓣连接的形状
  • 9.送入预热好的烤箱内中层,先用上下火180度烘烤20分钟,在转150度烘烤15分钟即可
  • 10.烤好的泡芙不要急于拿出烤箱,把烤箱开个封,散热10分钟后在取出烤盘
  • 11.烤好的泡芙切成两半
  • 12.中间挤上蛋奶酱
  • 13.按照自己喜欢的方式装饰
