    Steps to make 红烧猪蹄

    • 1.猪蹄洗净,用刀将表皮刮干净,如果有鬃毛需上火燎一下,然后斩小块
    • 2.凉水下锅,加入一汤匙料酒,烧开后撇去浮沫,趁水翻滚时将猪蹄捞起,因翻滚的水已将猪蹄上的脏东西冲洗掉了,所以猪蹄捞出后可以不用再清洗
    • 3.开始炒糖色,锅烧热,加少许油,小火,加两汤匙白糖,慢慢加热,糖融化后从外圈开始起泡,此时泡泡不透明
    • 4.当中心也充满泡泡,而且泡泡变得清澈,颜色酱红时,将猪蹄倒入,迅速翻炒,使全部挂上糖色
    • 5.倒入酱油,翻炒
    • 6.将猪蹄转到电压力锅里,加入开水
    • 7.加入桂皮、香叶
    • 8.加入盐
    • 9.加入葱姜
    • 10.加入料酒
    • 11.加入八角、花椒,电压力锅30分钟定时,出锅
