菠萝可丽方饼
做过好几次可丽饼,领导食过番寻味,用另外的形式又做一次,形式变一变,虽然口味一样,但看起来有新鲜感。

  • 饼馅菠萝120克
  • 饼馅玉米淀粉2茶匙
  • 饼馅黄油7克
  • 饼馅糯米淀粉2茶匙
  • 饼皮鸡蛋2只
  • 饼皮细砂糖20克
  • 饼皮黄油60克
  • 饼皮盐1/8茶匙
  • 饼皮香精1/2茶匙
  • 饼皮低筋面粉50克

Steps to make 菠萝可丽方饼

  • 1.把菠萝块先过一过盐水,再切至玉米般大的粒状,小锅置炉上,开火,放黄油;
  • 2.黄油溶化后放菠萝粒和糖,边煮边搅拌;
  • 3.等菠萝刚煮热,加入玉米淀粉,然后快速搅拌,煮至粉和菠萝混合后有点粘性和有透明的感觉,表示OK,熄火,将馅料盛起;
  • 4.用一大碗,放入黄油,打发蓬松;
  • 5.加入糖、蛋液、香精、搅拌均匀,再把盐加入面粉里,筛入大碗,再搅拌均匀;
  • 6.平底锅置炉上,开中小火,锅涂一屋薄薄的油,用一较大的勺,勺一勺面糊进锅,不要太多,够摊开一张饼的量就够了,再用面糊推子把饼推均匀,如果没有面糊推子,用稍平的锅铲也可以;
  • 7.在饼皮的一边放上适量饼馅,不要太多,如图7;
  • 8.将饼的左右两端向中间翻,留下中间宽约2.5英寸;
  • 9.再将前后两端叠过来,留下中间宽约3.5~4英寸,形成方形包袱;
  • 10.然后翻过来煎至金黄色,如果正面颜色还是太嫩,也可要又翻过来煎成金黄色。
