Steps to make 茄子肉馅水饺

  • 1.准备适量面粉。
  • 2.面粉中边加水边搅拌,直到成雪花状。用手揉匀成饺子面团,盖湿布饧15分钟再次揉匀。
  • 3.茄子去皮擦成丝,用1茶匙的盐拌匀腌制5分钟,用手挤去去多余的水分,葱姜切末。
  • 4.猪肉馅中放入1茶匙的盐、老抽、白糖一点点、胡椒粉、料酒、和饺子馅调料、葱姜末顺着一个方向搅打上劲,茄丝放入肉馅中,加入香油, 搅拌均匀成饺子馅。
  • 5.面团在案板上搓成条,分割成剂子。把面剂子按扁,擀成饺子皮。
  • 6.取一张饺子皮,中间放入馅料。
  • 7.左手做一个小碗状、右手捏饺子边,包成月牙形的饺子。
  • 8.包好的饺子。
  • 9.锅内加足水,大火烧开,下入饺子,用漏勺沿锅边轻推饺子,使饺子转起来不沾锅底,待锅内水开起来,打入半碗凉水,再开起来还要打入半碗凉水,反复3次。直到饺子的肚子鼓起来,用手按压饺子皮能迅速弹起来就煮熟了,立即捞出,吃的时候 可以根据自己的喜爱沾醋或辣椒油等。
