麻婆豆腐

Steps to make 麻婆豆腐

  • 1.备食材。
  • 2.花椒入锅中小火干煸至棕红色。
  • 3.花椒晾凉后用擀杖压碎。
  • 4.锅中倒水,加少许盐,烧开后放入豆腐,转小火,2分钟后捞出沥水。
  • 5.净锅烧热,入油,放入牛肉末中小火煸炒至干酥出油,放剁细的郫县豆瓣、花椒面、辣椒面,小火炒出香气和红油,放葱、姜、蒜末。
  • 6.放黄酒和酱油,大火炒出香气。
  • 7.加一些热水,放糖和盐烧开。
  • 8.把豆腐轻轻放入锅中,大火烧开后转小火炖5分钟。
  • 9.待汤汁浓稠后勾芡。
  • 10.关火即成,盛盘后撒蒜苗和部分花椒面。
