奶黄冰皮月饼【初味日记】
冰凉软糯的饼皮,可搭配奶香浓郁的奶黄馅,也可做成绵密的红豆馅。无需烤箱,蒸一蒸,揉一揉,很快就能做出颜值超高又好吃的月饼啦!

  • 糯米粉60g
  • 粘米粉45g
  • 澄粉45g
  • 糖粉75g
  • 牛奶270g
  • 中筋面粉25g
  • 细砂糖60g
  • 淡奶油40g
  • 鸡蛋100g
  • 牛奶60g
  • 黄油25g
  • 奶粉20g
  • 澄粉25g
  • 色素适量(调色用)
  • 糕粉适量(熟糯米粉)

Steps to make 奶黄冰皮月饼【初味日记】

  • 1.奶黄馅:鸡蛋、细砂糖、牛奶、淡奶油倒入碗中搅匀。
  • 2.奶黄馅:倒入中筋面粉、澄粉、奶粉,搅匀
  • 3.奶黄馅:加入融化好的黄油搅匀后过筛。
  • 4.4、奶黄馅:小火烧一锅热水,装有面糊的碗座入锅中,一直搅动面糊。
  • 5.奶黄馅:待面糊成团后继续搅拌,直到奶黄馅按压起来有一定的硬度即可,取出后包好保鲜膜晾凉备用。
  • 6.糕粉:把适量糯米粉倒入平底锅,小火翻炒至颜色微微发黄后倒出晾凉备用。
  • 7.碗中倒入糯米粉、粘米粉、澄粉、糖粉、牛奶,搅匀。
  • 8.加入玉米油,搅拌均匀。
  • 9.把面糊包好保鲜膜静置30分钟。
  • 10.面糊倒入装碟子,蒸笼内蒸熟。
  • 11.蒸熟的冰皮趁着温热刮出,稍稍放凉后用手把浮在表面的油揉回面团 。
  • 12.包好保鲜袋,放置完全冷却。
  • 13.取少量冰皮滴入适量色素揉匀。
  • 14.桌面撒上适量糕粉,把白色冰皮压开,正反面随意把蓝色冰皮放在表面。
  • 15.把冰皮搓成条后拉扯,重复3-4次直到出现大理石纹即可。
  • 16.把奶黄馅分成25g每份,冰皮分成30g每份。
  • 17.冰皮压成圆片,包入馅料。
  • 18.用月饼模具压出花型。(Tips:冰皮月饼做好后放冰箱冷藏2-3小时候再使用口感更佳)
