可可蜜豆月饼
这次的广式月饼与以往的不同,在月饼粉里加入了可可,让月饼的颜色发生了变化,当然味道上也有了不同,里面包的不是蛋黄而是它——蜜豆,甜甜的,香香的,味道更好哦。

  • 转化糖浆75克
  • 花生油25克
  • 绿豆沙馅100克
  • 蜜豆25克

Steps to make 可可蜜豆月饼

  • 1.将月饼粉与可可粉混合。
  • 2.将转化糖浆与花生油混合均匀。
  • 3.把月饼粉与可可粉的混合粉筛入转化糖浆与花生油中。
  • 4.用手将其抓匀成团。
  • 5.月饼模具用的是65克的,再加上包的是蜜豆比较湿一些,所以饼皮要厚一些,揉成40克一个球,绿豆沙馅分成20克一个。
  • 6.取一个绿豆沙馅用大指按一下。
  • 7.中间包上蜜豆,大约5克。
  • 8.将其包好揉圆。
  • 9.饼皮用手按扁,中间包上揉好的绿豆沙蜜豆球。
  • 10.月饼模具可以用少许月饼粉沾一下起到防粘的效果,然后把包好的月饼球放置其中。
  • 11.在不粘烤盘上压出图案。
  • 12.烤箱预热,180度,上下火,中层,烤20分钟左右。出炉晾凉,密封保存等待回油,大约2到3天就可以品尝了。
