鲜肉月饼
夜空的月亮越来越圆,中秋的韵味也越来越浓。“每逢佳节倍思亲”,在中国人民心中,中秋节等同于春节,都象征着团团圆圆。
今年的中秋节,对于我来说,还有一个重大的意义。发菜谱以来过的第一个中秋节,第一次学着做月饼。。。
中秋节各地的习俗都不同,但是月饼是无一例外的共同存在。和亲朋好友共聚一团,赏月,品月饼,也不失为一件乐事。。。
猪油早在几个月前,爸妈就给我们备好了;做面包时,留下了许多面粉;刚搅好的肉馅;看来《鲜肉月饼》是势在必行了。~(≧▽≦)/~啦啦啦。。。。

Details of ingredients

  • 猪肉225g
  • 细砂糖20g
  • 蜂蜜1大勺
  • 熟白芝麻1/2大勺
  • 香油10ml
  • 生抽1/2大勺
  • 料酒1小勺
  • 5g
  • 姜末1小勺
  • 蒜末1小勺
  • 全蛋液1勺
  • 白芝麻2勺(黑芝麻)
  • 普通面粉100g
  • 猪油50g
  • 普通面粉150g
  • 猪油60g
  • 细砂糖25g
  • 纯净水42g

Steps to make 鲜肉月饼

  • 1.将水油皮的配料,全部放入面包桶,揉成光滑的面团;不用面包机也可以,用双手揉面也很快的;
  • 2.揉好的面团,覆上保鲜膜,静置几分钟;
  • 3.将油酥里的配料,也揉成光滑的面团,也覆上保鲜膜,静置几分钟;
  • 4.肉馅提前备好,将鲜肉馅的配料全部混合;
  • 5.将肉馅搅拌上劲,使其有粘性;
  • 6.将水油皮油团、油酥面团分别分成8等分,搓圆,静置松弛15分钟备用;
  • 7.将水油皮丸子,压扁,擀圆,包入油酥丸子;
  • 8.像包汤圆那样收口;
  • 9.将收口的丸子,用擀面杖擀成长椭圆形,从下往上卷起来;
  • 10.把卷起来的面团,旋转90度;
  • 11.再次用擀面杖擀成长椭圆形,从下往上卷起来;
  • 12.将卷好的面团,压扁,包入猪肉馅;
  • 13.像包汤圆那样收口;用手掌稍稍压扁;
  • 14.将面胚放入烤盘里,刷上鸡蛋液,撒上白芝麻/黑芝麻;
  • 15.烤箱200度预热,烤盘放入烤箱中层,上下火烤30分钟。
