    • 1.在腰花两边垫上两根竹签。
    • 2.先斜刀45°切,再将腰花换个方向,直刀切。
    • 3.把腰花改成合适大小即可。
    • 4.猪腰切花刀,西芹切大片、姜、胡萝卜切片、葱切段。花刀切法如上所示。
    • 5.锅中坐水,加入花椒、生姜、料酒,水烧开后放入猪腰略焯去除血水捞出控干水分。
    • 6.锅中放入适量的油,下入葱段、姜片炒香。
    • 7.加入胡萝卜片、西芹大火翻炒片刻,再下入焯好水的腰花翻炒。
    • 8.加入料酒,大火翻炒片刻。
    • 9.加入少许生抽、白糖、醋、盐、胡椒粉翻炒均匀即可。
