【四川】熊掌豆腐
小时候,我们家就特别喜欢吃豆花。起初,家里做豆花是手推石磨,磨出豆浆然后在过滤豆渣。然后在加入适量的石膏点豆花。每次做豆花都会做很多,吃不完的豆花,外婆用纱布包起来做成豆腐,冷藏冰箱想吃的时候都有。外婆做豆花都是用自己种的黄豆打豆浆做的。做出来的豆花都是微甜还有豆子的原味。记忆中第一次吃熊掌豆腐是因为外婆做豆花做多了,吃不完然后做成了豆腐。不想吃水煮豆腐。外婆就把豆腐切成薄片,在油锅里小火慢煎至两面金黄,然后在调汁淋上就做成了美味的熊掌豆腐。
过年的时候每家每户都是大鱼大肉吃腻了,外婆时不时会做豆花来作为年夜饭餐桌上的一道美味。还有豆腐,当然豆腐选择的烹饪是熊掌豆腐。第一次吃的时候,我还很好奇的问外婆:这个为什么叫熊掌豆腐呢?没有熊掌的元素怎么就叫熊掌呢?外婆说:傻孩子,这个只是菜名。不是所有的菜名都和食材一致的。
熊掌豆腐是一道四川省的族传统名菜,属于川菜系。 色泽红亮,麻道浓香,咸鲜微辣,汁稠味浓。 制作精细,成菜颜色金黄,豆腐软香,味道咸鲜,具有较浓的地方风味。此菜所称"熊掌",是指豆腐形似熊掌,其味可与之媲美。

  • 1.豆腐切厚度合适的片。姜蒜切碎。
  • 2.锅中倒入适量的菜籽油。将豆腐一片一片的放入油锅中小火慢煎至两面金黄。
  • 3.豆腐煎好后,捞出利用锅里多余的油继续做调味汁。将姜蒜碎翻炒出香。
  • 4.接着加入豆瓣酱倒入油锅中翻炒出香。
  • 5.将煎至金黄的豆腐放入锅中,淀粉加入适量水勾芡倒入锅中。小火煮至沸腾关火,加入少量盐起锅装盘撒葱。
  • 6.熊掌豆腐就做好啦。
