春节期间,我和钟先生都宅在家里吃吃喝喝了~~
在这个与国同庆的假日里,作为吃货的我,肯定要做道一直心心念念的酸菜鱼咯~~
酸菜鱼的精髓,自然是鱼嫩汤鲜~~酸爽美味~~~~这自然少不了美味的酸菜~~~
平常我们做酸菜鱼,需要准备许多调料,常常搞得手忙脚乱~~~再有就是下班了买的鱼也不新鲜~~~也因此,我很少做这【酸菜鱼】~~~
难得放假,钟先生一早就去菜市买了条新鲜草鱼回来~~~
正好家里有酸菜鱼调料~~~连酸菜都不用准备了~~
用了酸菜鱼调料,【酸菜鱼】做法更简单,美味更升级~~
吃完【酸菜鱼】,还可以放些菜在里面烫着吃~~我家就比较喜欢在吃完鱼后,再放些豆腐煮着吃~~

  • 酸菜鱼调料1包
  • 植物油1大勺
  • 泡姜1块
  • 大蒜3瓣
  • 小葱4颗
  • 泡椒15个
  • 小米辣3个
  • 生抽1小勺
  • 0.5小勺
  • 1小勺
  • 料酒1小勺
  • 干辣椒6个
  • 花椒30粒
  • 郫县豆瓣酱1大勺

Steps to make 【四川】鲜香美味酸菜鱼

  • 1.备好食材:草鱼处理洗净后,将鱼头、鱼骨、鱼尾、鱼片分离,再备好酸菜鱼调料;
  • 2.鱼头、鱼骨、鱼尾同鱼片分别用盐、料酒抓匀后,腌制片刻;再调入酸菜鱼调料里的淀粉;
  • 3.再次抓匀,腌制片刻;
  • 4.将酸菜鱼调料的酸菜倒出来备好;泡姜、大蒜、小葱分别切碎;干辣椒、小米辣分别剪断;备好花椒、泡椒;
  • 5.锅里调入适量植物油;
  • 6.放入郫县豆瓣酱炒香;
  • 7.放入酸菜炒香;
  • 8.放入姜末,蒜末,葱末,干辣椒,花椒继续翻炒;
  • 9.加入适量清水,放入泡椒,调入适量生抽,白糖烧开;
  • 10.放入鱼头,鱼骨,鱼尾煮熟;
  • 11.最后放入鱼片煮熟;
  • 12.关火,起锅;撒葱花,小米辣碎。
