酸奶蓝莓芝士蛋糕

  • 黄油25g
  • 酸奶35g
  • 黄油30g
  • 奶油奶酪40g
  • 丘比蓝莓酱15g

Steps to make 酸奶蓝莓芝士蛋糕

  • 1.先来准备海绵蛋糕的原料
  • 2.这时候提前把融化了的黄油和酸奶混合备用(注意是融化,不是软化)
  • 3.鸡蛋和白砂糖、盐一起到入盆中(这时候烤箱可以预热180度)
  • 4.盆地坐上温水,60度左右即可(全蛋比较难以打发,所以必须用水浴法打发)
  • 5.蛋液开始慢慢变稠
  • 6.打到可以来起来两三秒滴一滴蛋液,很粘稠的状态
  • 7.分三次筛入低粉
  • 8.从下往上慢慢翻拌,每一次拌匀后再加(手轻轻地慢慢翻拌防止消泡,这时候动作可以缓慢一些)
  • 9.拌匀后,把酸奶和黄油混合溶液均匀的倒入蛋糊里,然后开始快速从下往上翻拌(注意,到液体时候用橡皮刮刀挡一下,均匀的倒入。拌的时候从下往上手法一定要快,就是一个字速度30秒内拌匀。之前多少次都是因为慢了结果消泡,成品出来不是塌陷就是硬疙瘩。)
  • 10.倒入模具,中层180度20分钟左右即可(有轻微开裂也不要紧,想要好看就温度再低上10-20度烤制)
  • 11.这时候制作蓝莓芝士奶油霜,先把软化了的黄油打发成蓬松羽毛状
  • 12.加入切碎了的奶油奶酪继续搅打
  • 13.打匀黄油和奶油奶酪之后加入丘比蓝莓酱15-20g即可(一大勺左右,不用很精确)
  • 14.继续搅打均匀,这时候可以看到奶油霜的形态很稳定(就像牙膏一样)
  • 15.装入裱花袋里
  • 16.挤上喜欢的形状,最简单就是画一个圈,然后在中央往上一拉即可
