Steps to make 姜汁排叉

  • 1.用泡姜的水,约一至两个小时;
  • 2.面要和硬一点,1斤面加入4两生姜水;
  • 3.面和好后盖上保鲜膜饧上30分钟;
  • 4.面饧好后准备擀面,为防止面粘案板,先在案上撒些淀粉,将面团擀成大面皮;
  • 5.把擀好的面去边角,然后切成6厘米宽的长条,要同样宽;
  • 6.切好后2个面片叠在一起码整齐,在每小块儿叠起的那一端切三刀,中间一刀要长一些;
  • 7.翻排叉, 2片面片叠在一起, 把面片的一端从左边的刀口穿过拉好;
  • 8.把面片的另一端从右边的刀口穿过拉好;
  • 9.粘连的部分尽量翻起来, 整理好排叉;
  • 10.炸排叉:做油锅,倒入适量油,油五成热时,排叉下锅, 用小火;
  • 11.炸成淡黄色,捞出控油;
  • 12.裹糖:做煮锅,放入适量水与姜丝一起煮;
  • 13.把姜味煮出来后,将姜丝捞出;
  • 14.锅中放入白糖,待白糖化开;
  • 15.再放入麦芽糖,搅拌均匀;
  • 16.糖汁熬开后,用筷子夹起排叉,依次裹糖;
  • 17.把粘好糖的排叉放在筛网上控一会;
  • 18.待糖冷却,就可以码盘了。
