暖暖午后一抹绿[抹茶蜜豆蛋糕卷]
买了抹茶粉好久了,一直想做一款加奶油的抹茶蛋糕,就是自己比较懒,觉得过程比较麻烦也就一直搁下了!昨天早早下班早回家,于是又开始折腾了......阳光暖暖,一个人享受这美好闲静的午后时光!

Details of ingredients

  • 低筋面粉60克
  • 抹茶粉8克
  • 细砂糖40克(加入蛋白中)
  • 鸡蛋4个
  • 泡打粉1/4小匙
  • 鲜牛奶30克
  • 色拉油40克
  • 动物性鲜奶油100ml
  • 细砂糖24克(加入蛋黄中)
  • 塔塔粉1/8小匙

Steps to make 暖暖午后一抹绿[抹茶蜜豆蛋糕卷]

  • 1.蛋白蛋黄分离打入容器,蛋黄加入24克细砂糖
  • 2.用手动打蛋器打匀,不要打发
  • 3.加入牛奶,色拉油,搅打均匀
  • 4.一起筛入低筋面粉,泡打粉,抹茶粉,用橡皮刮刀轻轻上下拌匀,不不要过度搅拌以免起筋
  • 5.用电动打蛋器慢速把蛋白打到出现大泡时加1/3的细砂糖
  • 6.打到蛋白泡沫发白再加入1/3的砂糖用高速打,等到蛋白浓稠时再加入剩下的1/3砂糖
  • 7.搅打至提起打蛋器时出现弯曲的尖角就表示已经到湿性发泡了,打到湿性就可以!
  • 8.将1/3蛋白放进抹茶面糊中轻轻上下翻拌均匀。拌匀后再分次加入其它2/3的蛋白糊
  • 9.拌好后倒入铺好烘焙油纸的烤盘内
  • 10.用刮板抹平表面,震几下去掉大气泡,入预热好的烤箱170度烤15分钟左右,烤好后倒扣撕去油纸,在蛋糕的下方放一张保鲜膜,方便卷起
  • 11.将冷藏好的鲜奶油打发至不会流动的状态(可以裱花的程度)
  • 12.在抹茶蛋糕上抹上一层打发好的鲜奶油(厚一些)撒上蜜豆
  • 13.从下往上卷起,外包一层保鲜膜,放冰箱冷藏定型再切块就可以了,可以在蛋糕上再挤上一层鲜奶油,撒上些许蜜豆味道更佳。
