Steps to make 芦笋虾球

  • 1.芦笋和大虾准备好。
  • 2.芦笋的老根削掉,把底部的老皮也削掉一些。
  • 3.大虾去头尾剥壳。
  • 4.用刀刃将虾背从头至尾划开,取出虾线,这样做一是卫生,二是可以让虾球成熟后更加立体;腹部的虾线可用刀尖划破挑出。
  • 5.芦笋入开水锅中,水中放少许盐,芦笋焯水1-2分钟,变色后捞出。
  • 6.芦笋冲凉可保持清脆的口感和碧绿的颜色,切寸段。
  • 7.凉锅凉油,将虾仁倒入锅中,中火加热,将虾仁炒变色并且身体卷曲成球状。
  • 8.将芦笋倒入锅中,迅速撒一点盐翻炒融化,出锅。
  • 9.芦笋虾仁,清脆爽口,鲜香味美又开胃!
