【东北】炸萝卜丝丸子
这种绿芯萝卜是我们北方常见的品种。生吃的话甜脆微辣,也可以用来做汤或者凉拌菜。这就是做萝卜丝虾汤剩了半个萝卜,不吃的话就糠芯儿浪费了,用来炸丸子吃正好。

按照我们东北的习俗,每年春节前,要专门有一天用来做油炸的吃食,叫“走油”。一般是炸鱼,炸丸子,炸面叶儿等等。老一辈的生活条件相对艰苦,油炸的食物不是随时能吃到,要等到年节的时候才会有。现在的生活别说油炸,就是大鱼大肉和各种珍稀食材,也很常见。但是吃炸萝卜丝丸子的习惯,仍然保存至今。一来因为好吃,二来因为容易保存,不容易变质,三来油炸的吃起来方便,正好符合春节期间好好休(tou)息(lan)的节奏。制作难度不大,食材也容易获得,成品可以当成素菜,或者夜宵吃都可以。剩的丸子还可以和肉菜再烩一下吃,又是不同的味道。我家的小朋友就很爱吃,

Steps to make 【东北】炸萝卜丝丸子

  • 1.萝卜洗净,无需去皮,直接擦成丝
  • 2.入盐水中煮到七八成熟,捞出过冷水
  • 3.挤净水份,加少许盐、面粉、蛋液和花椒粉拌匀。萝卜性凉,花椒粉性热,可中和一下,且能提香
  • 4.拌成如图的状态,在手心里稍用力能团成一团即可
  • 5.油烧至五六成热时(将木筷子头放在热油里,周围冒出丰富的小气泡,差不多就是五六成热了),用手将丸子团成型,一个个放入
  • 6.轻轻搅动,先炸一遍定型,再改小火复炸一下,炸透炸熟
  • 7.捞出放在厨房纸上,吸去余油即可
