洋芋(土豆)擦擦
洋芋擦擦是陕北、晋西、陇东等地的汉族传统面食之一。用不起眼的土豆做成的洋芋擦擦,色泽金黄的土豆泛着淡淡的油光,土豆的清香洋溢开来,吃上一口,既有薯条的口感和嚼头,又有青红椒的鲜香。制作原料和程序都很简单,它是将土豆擦成稍粗的丝,再拌以干面粉,使每一根丝上都均匀地裹上一层面衣,然后上屉蒸熟,然后用炒锅快火炒出,其味更佳。洋芋擦擦属天然绿色食品,一年四季均可食用。土豆含有大量淀粉以及蛋白质、B族维生素、维生素C等,能促进脾胃的消化功能。

Steps to make 洋芋(土豆)擦擦

  • 1.洋芋(土豆)用擦子擦成长条,清水淘洗,控干水备用。
  • 2.在洋芋(土豆)条上均匀撒上干面粉,用筷子拌匀。
  • 3.蒸锅篦子上抹油,防止粘锅。
  • 4.将裹匀面粉的土豆条铺到篦子上。
  • 5.大火烧开锅后,蒸十五分钟。
  • 6.用铲子取出,平摊在盖垫上晾凉。
  • 7.胡萝卜擦丝备用。
  • 8.青椒切细丝备用。
  • 9.葱切马蹄片,备干红辣椒和花椒。
  • 10.炒锅内加底油,烧至七成热,加入花椒、葱片爆香,加入胡萝卜、料酒、酱油、米醋、食盐、少许清水烧开,加入青椒丝。
  • 11.加入洋芋(土豆)条,大火快速翻炒一分钟。
  • 12.出锅装盘。
