Steps to make 八寸戚风蛋糕胚

  • 1.70克食用油,65克牛奶,10克白糖称重。
  • 2.搅拌乳化。
  • 3.加入80克低筋面粉Z字形搅拌至无颗粒状态。
  • 4.加入五个鸡蛋蛋黄继续Z字形搅拌。
  • 5.达到顺滑酸奶状备用。
  • 6.蛋白里加入1克盐,60克白糖,几滴白醋。
  • 7.打发至提起有弯弯的尖角状,加入16克玉米淀粉,继续打发至提起有硬挺的尖角。
  • 8.取三分之一蛋白霜加入蛋黄糊糊里,翻拌均匀。
  • 9.再倒回蛋白霜中继续翻拌均匀。
  • 10.翻拌完成的糊糊,倒入八寸模具中,振几下。
  • 11.烤箱预热,上下管135度烤35分钟,再转150度烤35分钟。
