赣味片刀鸭
市井人家对鸭子的喜爱自不消说,江西的精英团体也一样。江西传统鸭子的吃法无外乎红烧、清炖两样,但却是宴客时必不可少的菜肴。当然连北京片刀鸭也能在南昌吃到,凡鸟我就有幸和家人吃过一次。那是我第一次吃那种带饼的片刀鸭,我手忙脚乱的包好一块鸭子放入嘴里,那种满嘴留香的感觉现在还记忆犹新。
不过这种正宗北京片刀鸭,由于烤制过程中刷了蜂蜜,所以稍微带点甜味。对于凡鸟家的老公来说,让他吃这种咸中带甜的食物,简直就是要吐。为了照顾他的口味,我就做了一次咸辣口味的片刀鸭,虽然烤出来之后,没有北京片刀鸭那么油亮漂亮,但味道是绝杀的。带给父亲品尝,他也很满意。我想在江西长大的人里面像我老公这样的应该也不少,所以将过程写下来和大家分享。

Steps to make 赣味片刀鸭

  • 1.准备好半边鸭,洗干净。
  • 2.把所有的调料放入碗中搅拌均匀。
  • 3.所有的调料倒入盛鸭子的盘子里面。
  • 4.涂抹均匀后,腌制24小时之后入烤箱烤制45-60分钟即可。
