从小就特别爱吃茄子,可茄子一直是我的死穴,每次拍出来都惨不忍睹,以至从来就没发表过一篇博文。这次却很幸运,拍出来美美的,茄皮也长脸,还带着那抹紫。
  天气热了,我爱做凉拌菜,一来非常简单,二来解暑开胃,手撕茄子算是夏季我家出镜率最高的凉拌菜之一,茄子用凉拌的方式来烹制,味道是非常赞。 
  朋友都喜欢我做的凉拌菜,凉拌菜的灵魂关键在于那碗凉拌汁。今天就以手撕茄子为例,细聊凉拌菜要注意哪些关键点,如何调配凉拌汁,只要细心掌握,包你能做出美味可口的凉拌菜。
  1、食材要新鲜,一定要清洗干净;器皿、洗切物件最好用开水烫过。
  2、凉拌菜最好切成均匀的大小,以便充分均匀地吸收凉拌汁。 
  3、酱油和香醋的比例是2:1,也就是2汤匙酱油,1汤匙香醋,以此类推,香醋还有杀菌的作用。
  4、大蒜最好用压蒜器压成泥,这种方式比用刀切末味道更浓郁。一定要添加蒜泥,蒜泥有杀菌功效哦。
  5、最好用自制的辣椒油,香辣味十足,再加入几滴芝麻油,香味更浓郁。   
  6、如果食材水分较多,可以先用盐腌一会,再把水倒掉,这样食材的口感会变得更爽脆。
  7、焯烫过的菜,一定要过凉,再沥干水分,这样才能保持脆感。
  8、有的食材,可以适当添加香菜或葱花,以增加凉拌菜的风味。

  • 1.主材料备好。
  • 2.茄子去头去尾,放入蒸锅大火蒸熟。
  • 3.这时我们可以准备凉拌调料,指天椒切圈,蒜压成泥,香菜切末,酱油4汤匙、香醋2汤匙、盐1茶匙、鸡精1茶匙、芝麻油几滴、自制辣椒油适量,调配成凉拌汁。
  • 4.茄子蒸软至用筷子能插入即可(要多插几个地方)。
  • 5.将茄子拿出,撕开两半放入盘中放凉。
  • 6.放凉后再撕成细长条。
  • 7.然后撒入香菜末、辣椒圈和蒜泥,再淋入备好凉拌汁。
  • 8.拌匀放置一会即可开吃。
