红烧元宝肉
红烧肉是以五花肉为制作主料,肉是五花三层,经过制作之后,肥瘦相间。香甜松软,美味不可用言语来形容,肥而不腻,堪称美食中的一道经典名菜。我这次做的红烧肉。没有炒糖色,直接用的红烧酱油,烧出来颜色一样艳丽,酱汁浓郁,完全融入到红烧肉里,红烧肉经过小火煨炖,肉质酥烂,入口即化,完全没有肥肉的油腻感

Steps to make 红烧元宝肉

  • 1.姜和葱分成两份,各取其中一份。姜切片。葱切段。五花肉整块下入锅里,开火煮,加入料酒,葱,姜片,绰水。
  • 2.撇去浮沫。绰好的五花肉拿出来晾一下
  • 3.冷却后切条
  • 4.然后均匀的切成块状
  • 5.剩下的一半葱绰水
  • 6.像图里这样捆十字花结
  • 7.依次捆好全部。葱绰水捆绑的时候不容易断,如果葱的长度不够可以两根接一起
  • 8.锅内入少许油,放适量花椒炒香。油不要放太多。五花肉会出油
  • 9.下入捆好的五花肉扁炒
  • 10.倒入红烧酱油,使五花肉均匀的裹汁
  • 11.加入温水。水要盖住五花肉。开大火
  • 12.水沸腾后加入大料和剩余的姜片,转小火炖一个小时
  • 13.最后大火收汁的时候放盐,这时候用筷子可以轻松扎进肉里
  • 14.收完汁后盛盘撒葱花装饰。可以看到红烧肉色泽诱人
  • 15.肉质酥烂,酱汁浓郁,入口即化
  • 16.这一盘红烧肉,我感觉我可以吃三碗米饭。。哈哈
