宫保虾球
一般炒这道菜,虾仁过油,少油更健康我改用虾仁汆水,这样虾仁更加嫩脆,味道一样鲜美,辣椒和花椒我也省略了,用的是麻辣红油代替的。看到这大家又会拍砖了,我认为正宗不正宗,自己说了算,合适自己的口味就是最正宗。

  • 1.准备好所有食材。
  • 2.大虾冲洗干净。
  • 3.去头 去皮。
  • 4.用剪刀将虾背剪开,将虾线挑出来,冲洗干净。
  • 5.虾仁放入碗中,依次加入白胡椒 盐 淀粉 油 料酒用手反复抓几下放冰箱冷藏入味15分钟。
  • 6.葱白切成段,姜蒜切成末,
  • 7.将糖、醋、盐、淀粉 生抽、红油,放入碗中,调和成均匀成宫保汁。
  • 8.锅中注入水 烧开,放入虾仁滑开,虾仁变色成球捞出,沥干水分。
  • 9.另起锅,注入油,爆香姜丝和大蒜、
  • 10.改中火,倒入调味汁,翻炒两下。等调味汁慢慢变浓稠。倒入虾仁
  • 11.翻炒均匀,让虾仁均匀的裹上料汁后加入葱段和花生米。
  • 12..快速翻炒几下即可。
