广式红豆沙月饼
每年中秋都会做许多这款豆沙月饼,大部分都送给亲友,自己也喜欢吃。
其实自制月饼也不难,还可以按照自己口味来制作,味道特别好,卖相也不错,再做个好的包装,送人也是不错的哟。

  • 转化糖浆150g
  • 枧水2g
  • 玉米油50g
  • 红豆沙400g
  • 鸡蛋黄1个
  • 防沾面粉20g

  • 2.筛入中筋面粉
  • 3.和成团后用保鲜膜包起来放入冰箱冷藏1小时以上
  • 4.50的模具,习惯的分法是馅25g,饼皮25g将面团和馅料分别按量分份,并搓成圆球备用。 红豆沙的做法:http://home.meishichina.com/recipe-191746.html
  • 5.取一块面团在手掌上按成圆形后放入豆沙馅
  • 6.用虎口慢慢收紧封口后搓圆
  • 7.放到面粉里滚一圈,再抖掉多余的粉
  • 8.搓成椭圆形便于放入模具
  • 9.月饼模具里撒上面粉晃荡均匀后倒出多余的粉
  • 10.将包好的饼坯放进模具里
  • 11.再把模具倒扣并用力往下压,脱模后成形后放入烤盘
  • 12.烤之前先在月饼表面喷上水
  • 13.烤箱上下火180度预热,将烤盘放置在中层烤6分钟定型后取出
  • 14.将蛋黄打散备用
  • 15.取出烤定型的月饼后先放凉几分钟,再刷上一层薄薄的蛋液,刷好后再放回烤箱继续烤15分钟左右,上色即可
  • 16.烤好后取出散热,放凉后密封保存一天即可回油享用了
