老婆饼
老婆饼是广东潮州地区一种汉族传统名点,是广东潮式月饼中用料最少、做工最简且最为人们所熟知的饼类。老婆饼讲究皮薄馅厚,馅心滋润软滑、味道甜而不腻。

  • 猪油195g
  • 100ml
  • 冬瓜糖80g
  • 椰蓉40g
  • 猪油30g
  • 熟糯米粉100g
  • 熟芝麻20g
  • 砂糖100g
  • 140ml

Steps to make 老婆饼

  • 1.准备好食材。辅料中的食材就是馅料的食材:冬瓜糖剁碎,然后将椰蓉粉、猪油、熟糯米粉、熟芝麻、细砂糖和水混合拌匀做成馅料备用。
  • 2.油皮:高粉125克+低粉125克+细砂糖50克+猪油70克+水100ml混合揉至不粘手即可,静置30分钟。
  • 3.油心:低粉250克+125克猪油混合,充分拌匀即可。
  • 4.油皮26克左右、油心20克左右,各分成18份。
  • 5.用油皮抱住油心。
  • 6.包好后静置10分钟。
  • 7.逐个擀开。
  • 8.包入馅料,再静置10分钟左右。
  • 9.擀成圆饼状。
  • 10.表面刷蛋液,自然风干后再刷一层蛋液。
  • 11.用小刀在表面划出两个小口作为装饰。
  • 12.撒上少许的白芝麻。
  • 13.200°预热烤箱5分钟,180°烤2--25分钟。中层,上下火。
  • 14.烤制金黄色。
  • 15.外皮脆,中层酥,馅软嫩。非常的美味可口。
