香辣炖羊肉
冬天到了进补的时候了,北方的冬天比较冷,这两天还没供暖,正好吃点羊肉暖身。
之前家里吃羊肉都是羊肉丸子汤或者火锅,很少会炖,也许怕膻味重,就没尝试过。一个偶然的机会,公司春节员工福利发了羊肉,赶紧研究了一下如何做。综合了一些做法后,觉得这样炖应该是最香的。这道菜我轻易不做,做了几次香味让煤气报警,弄得必须要把报警器关掉才能继续,因为我用了一种匈牙利的梅子酒。这个果酒是公司老总从国外带回送我的,但我不能喝酒,就利用起来做菜了,没想到那么香!再配上香米饭,这顿饭真是受不了!哈哈!

  • 羊腿肉600g
  • 胡萝卜1个
  • 铁棍山药1根
  • 香菜2根
  • 大葱半颗
  • 大蒜瓣5瓣
  • 干辣椒8个
  • 花椒35粒
  • 八角2个
  • 香叶3片
  • 冰糖8g
  • 1勺
  • 匈牙利梅子酒80ml
  • 生抽1勺
  • 老抽1勺
  • 8g

Steps to make 香辣炖羊肉

  • 1.羊肉切块焯水备用
  • 2.准备所有调料和辅材,胡萝卜山药去皮
  • 3.锅烧热,下油,葱蒜爆香
  • 4.放八角,香叶,花椒,干红椒,冰糖爆香
  • 5.放入羊肉翻炒
  • 6.放生抽
  • 7. 放老抽,翻炒
  • 8.放匈牙利梅子酒(没有的可以选用其他酒类,但味道可能不如这个香),一勺香醋(为了使肉容易烂),开水没过羊肉
  • 9.我用的是这种酒,是匈牙利产的一种梅子酒,细长的瓶颈。
  • 10.炖羊肉的过程中,把胡萝卜和山药切滚刀块。注意,早切了山药会变黑。
  • 11.小火炖到半小时时,放胡萝卜,盐
  • 12.放入山药,翻拌均匀
  • 13.再炖10-15分钟收汁,出锅
  • 14.装盘,撒上香菜
  • 15.成品,满屋子都飘着羊肉和香菜混合的香味,配上碗香米饭,开吃。
