小米稠粥
是一款地方特色美食,早摊常见。
一般用铁锅来做,一锅米粥熬呀熬呀熬,等米粥熬到棉稠软糯的时候,把多出的米汤舀出来,然后小火继续焖,直至粥更稠,有时锅底也会有厚厚的锅巴。最后用勺背把粥再压一下,米会融合在一起,吃起来更细腻。另外
配菜可凉可热,但一定要汤汁儿多一些,用小米稠粥蘸着拌菜食用或把拌菜倒入小米稠粥中吃,都是非常不错的。
今天我做的是凉菜,调料水是花椒+大料+盐+水煮开,晾凉,加一点醋和酱油、香油等即可。
用电饭锅做更省事儿,既使量少也不用担心糊锅。

Steps to make 小米稠粥

  • 1.准备食材。
  • 2.淘米。
  • 3.把米放入电饭锅,倒入适量水。
  • 4.设置煮粥模式。
  • 5.用勺子背面压一下米粥,使其更细腻更软糯。
  • 6.土豆和胡萝卜刨丝(土豆丝可浸泡在水中防氧化)。
  • 7.土豆丝焯水。
  • 8.胡萝卜也焯一下。
  • 9.用冷水浸泡一下焯过的土豆丝和胡萝卜丝。
  • 10.把土豆丝和胡萝卜丝捞出控水,放入碗中倒入调料水。
  • 11.调入辣椒拌匀。
  • 12.用小米稠粥蘸着拌菜食用或把拌菜倒入小米稠粥中吃。
