莜面凉皮
用莜面做的凉皮,口感劲道,很好吃哦!

Steps to make 莜面凉皮

  • 1.莜面300克放入盆中,倒入300克刚烧开的水,用筷子搅拌成絮状。
  • 2.晾至不烫手时,揉成光滑的面团,盖湿布静置10分钟左右。
  • 3.黄瓜洗净去皮,切丝备用。
  • 4.大蒜捣成泥,放入碗中,色拉油烧热,泼在蒜泥上。
  • 5.调入1汤匙香醋,2汤匙生抽,搅拌均匀。
  • 6.加入少许花椒粉,调料汁就拌好了。
  • 7.台面上撒薄薄一层玉米淀粉,取适量的莜面团,按扁。
  • 8.慢慢将面团擀成厚约3mm的面片。
  • 9.锅中添水烧开,放上蒸屉,铺上打湿的棉布,将面皮放在棉布上,盖上锅盖,中火蒸2分钟左右。蒸好的面皮倒扣在案板上,晾凉。蒸好的面皮不要叠放在一起,防止粘在一起。
  • 10.将晾凉的面皮切细条。
  • 11.将黄瓜丝,莜面凉皮放入碗中,调入拌好的调料汁。
  • 12.加入适量辣椒油,搅拌均匀即可。
