黄金椰蓉球
这个配方源于一次失败的产物,那天本来是想做抹茶冰淇淋,结果在熬制蛋奶糊时一不小心,火大了,结果就得到了一锅蛋花汤~~,于是第二次制作冰淇淋之后,就剩下了八个蛋清和一锅蛋花汤,本着不浪费的原则,加工成了黄金椰蓉球,没想到竟意外的特别好吃,于是,就有了这次记录。

  • 牛奶250g
  • 蛋黄65g
  • 蛋清230g
  • 细砂糖70g
  • 椰丝300g
  • 低筋面粉80g
  • 细砂糖200g

Steps to make 黄金椰蓉球

  • 1.牛奶倒入锅中,小火加热至冒热气,不要沸腾。
  • 2.砂糖70g加入蛋黄中,用手动打蛋器微微打发至发白即可。
  • 3.牛奶缓慢滴入蛋黄液中,并不停搅拌,每次不要滴入太多,以免把蛋黄烫熟。
  • 4.将混合好的蛋黄液马上倒回锅中继续小火加热至变成浓稠的糊糊状。我就是在这一步操作失误,火太大了,以致成为了一锅蛋花汤。。。
  • 5.把椰丝和低筋面粉、细砂糖200g混合均匀。
  • 6.将放凉后的蛋花汤倒入混合物中,用刮刀搅拌均匀。
  • 7.分多次将蛋白倒入椰丝混合物中。
  • 8.用刮刀搅拌均匀,成为一个均匀的面团。
  • 9.称取16g面团,揉成一个小球。
  • 10.将所有小球放入烤盘,送进预热好的烤箱。中层,150度,25分钟左右。烤至表面呈现美丽的金黄色。烤好的椰丝球,外皮香脆、内部酥软、奶香浓郁。
