自制甜酒酿
这甜酒曲是夏天早就买了的,现在天凉了才来做,本来应该是用不着棉被的,现在是一定要用了,我还给这宝贝用上了热水袋呢,因为第一次做,呵护得跟自己孩子似的,还好结果很成功,酒酿非常甜蜜,口感很正,糯米发酵过后吃着有点渣的感觉但不空心,哈哈,以后甜酒酿就自己做咯。

    Steps to make 自制甜酒酿

    • 1.糯米洗净用冷水浸泡,甜酒曲准备好。
    • 2.糯米浸泡16小时以上(天热放冰箱),至用手取一粒米一搓就碎,即可上锅蒸熟。
    • 3.蒸熟的糯米取出到无油无水的容器凉至30度左右。
    • 4.撒适量甜酒曲在上面,一般是500克米2克酒曲这样的比例。
    • 5.分次倒入凉开水,边倒边用手搓至米粒都分散,酒曲和米拌匀。(可戴一次性手套)
    • 6.取一无油无水的容器,把拌好的米压实,并在中间留个小孔以便观察出水情况。
    • 7.盖上盖子密封。用棉衣或棉被包好,放入一个热水袋在衣服或棉被里,让它尽量保持30度左右的温度。热水袋的水凉子就重新换下水。
    • 8.一天后,米粒尝起来有点甜了,两天后,小孔中充满了大部分水,晃动容器糯米能移动,就好了,这时的酒酿已非常非常甜蜜了。
