Steps to make 苏式五仁月饼

  • 1.食材集合。
  • 2.水油皮所有材料混合揉成光滑的面团,松弛30分钟。(最好能扯出薄膜,即使不用扯膜,光滑的面团延展性也要足够)。
  • 3.松弛水油皮的时候来做油酥,油酥材料混合均匀搓成油酥。
  • 4.馅料每个30克滚圆备用。
  • 5.松弛好的水油皮稍微压扁。
  • 6.包入油酥。
  • 7.包好油酥的面团擀开,成长方形。
  • 8.两端分别向中间1/3处折叠。
  • 9.再次将其擀成薄的规整的长方形面片。
  • 10.自一端开始卷成长筒状。
  • 11.卷好的面皮分成12等份。
  • 12.取一份面剂切口处捏合往上,整理成圆形。
  • 13.擀成四周薄中间略厚的圆形面片,放上一份馅料。
  • 14.收口捏紧。
  • 15.做好后码入烤盘,顶部刷上蛋黄液,撒上些黑芝麻点缀。
  • 16.烤箱200度充分预热,烤盘放入烤箱中层,转180度烘烤30分左右出炉。
