自制凉皮
做过了洗面的凉皮,今天做了不用洗面的,节省时间,一会功夫就能吃到爽口的凉皮,口感劲道又柔软。

Steps to make 自制凉皮

  • 1.将高筋面粉,少许盐放入盆中,先加入200克的冷水,用擀面杖搅拌成均匀,劲道的稠糊状。搅拌约5分钟。凉皮要想劲道,这一步很重要。
  • 2.分6到7次加入剩余的190克冷水,每加一次要搅拌均匀再加下一次。搅拌好的面糊静置10分钟左右。
  • 3.取一个披萨盘之类的平盘,抹少许油,盛入适量的面糊,转一圈,使面糊薄厚均匀。
  • 4.放入开水锅中,盖盖,大火蒸1分钟左右,凉皮鼓起大包就熟了。
  • 5.将蒸凉皮的平盘放入冷水中冷却,不烫手时,慢慢将凉皮揭下来,放入抹了油的盘中,每张凉皮上也抹少许油,防止凉皮粘在一起。
  • 6.大蒜捣成泥,加入适量凉开水,搅拌均匀。
  • 7.花椒约20粒,八角一个,用开水泡10分钟。
  • 8.香醋和水按照1:3的比例兑好。
  • 9.黄瓜洗净,切丝备用。
  • 10.凉皮切成宽窄合适的条状。
  • 11.取适量凉皮和黄瓜丝,放入容器中。
  • 12.调入适量的调料水,辣椒油搅拌均匀。
  • 13.盛入盘中。
