【年夜饭】非你不可的卤水双拼
以前,在潮汕过年时,准备一整只卤鹅作为年末的大菜祭拜祖先,告慰先人这一年全家勤劳殷实。但随着生活的好转,年夜饭有越来越多的选择,这一风俗开始演变,但逢年过节宴请宾客时,潮汕人还是喜欢来一道卤水拼盘,常见的有卤鹅和卤猪,可以根据个人喜好自由选择,搭配来吃。
今年的年夜饭,选了猪舌与豆干,做了一个卤水双拼。猪舌,粤语猪横利,有发财兴旺之意。而豆干,取其方方宛如官印之状,加上潮语“干”与“官”同音,古时“万般皆下品,惟有读书高”,勤劳的潮汕人吃豆干寓意着勤奋上进,读书聪明,寒门学子能鱼跃龙门的美好愿望。
美好寓意的卤猪舌尝起来酥嫩适口、鲜咸入味,而豆干则嫩滑爽口一点也不逊色。

  • 陈皮1块
  • 干辣椒4颗
  • 3g
  • 豆干2块
  • 八角2颗
  • 生抽1小碗

Steps to make 【年夜饭】非你不可的卤水双拼

  • 1.猪舌洗净,冷水下锅。
  • 2.煮开烫熟;取出。
  • 3.用小刀将舌苔(白色部分)刮干净。
  • 4.准备好老陈皮、八角与干辣椒,洗净。
  • 5.将猪舌与老陈皮、八角、干辣椒一起放入砂锅。
  • 6.加入生抽1小碗。
  • 7.加入可以基本掩盖猪舌的开水。
  • 8.大火煮开。
  • 9.转小火煮40分钟后,去除陈皮,加入盐。
  • 10.豆干用清水冲净。
  • 11.将豆干放入卤水锅中,转中火煮开,再用小火煮10分钟,熄火。
  • 12.让猪舌与豆干在卤水中浸泡至卤水凉却,捞起。
