铜勺饼--粤北特产小吃
广东韶关铜勺饼俗称铜铁勺米果,是广东韶关著名的汉族传统小吃,也是客家地区一个历史悠久的千年传统美食,客家又以南雄“珠玑”铜勺饼为特色品牌,铜勺饼色泽光亮、香酥可口、老少皆宜的休闲食品,是居家、休闲、旅游、馈赠朋友的上选食品。
这种小吃的名字缘制做它的工具,是一种大概有杯底大小的平底小勺子,边上有一根长长的柄,先将面浆均匀的摊在匀面上,然后将花生或酸菜或萝卜虾米等陷放置在中央,再在上面洒上一层面浆,然后放入油锅里面炸至金黄色。为民间小食,作佐酒小吃,香酥可口。

Steps to make 铜勺饼--粤北特产小吃

  • 1.准备好所有食材,粘米粉、花生仁,模具(铜勺),PS:这种磨具在韶关各县市都有的卖,其他地方好像没有。
  • 2.花生仁,浸泡洗干净,沥干水;
  • 3.200克粘米粉加280克清水、盐、五香粉拌均;PS:水量与粘米粉比例很重要,太稀太稠都影响口感;
  • 4.加入沥干水的花生仁拌均;
  • 5.拌均好的米浆静放10分钟;
  • 6.热锅,倒油,油温160度左右,放入空的铜勺干炸;
  • 7.炸过的铜勺,将米浆摊在上面;
  • 8.油温达180度,放入锅中炸;
  • 9.炸到一定程度,铜勺模具自动脱模
  • 10.翻转一次,继续炸到金黄色,捞出;
  • 11.捞出的炸好的铜勺饼,用吸油纸把多余的油吸干;冷却之后香酥可口。
