手抓饭
抓饭是标准的新疆美食。手抓饭是一种营养十分丰富的食品,羊肉、洋葱、胡萝卜和大米都是含多种维生素的补品,特别是胡萝卜被人们称为小人参,营养是十分丰富。用这样的原料做的饭,当然补人了。
关于手抓饭还有一段动人的传说。相传在一千多年前,有个叫阿布艾里.依比西纳医生,在他晚年的时候,身体很虚弱,吃了很多药也无济于事,后来他研究了一种饭,进行食疗。他选用了羊肉、胡萝卜、洋葱、清油、羊油和大米加水加盐后小火焖熟。这种饭具有色、味、香俱全的特点,很能引起人们的食欲。于是他早晚各吃一小碗,半月后,身体渐渐地恢复了健康,周围的人都非常惊奇,以为他吃了什么灵丹妙药。后来,他把这种“药方”传给了大家,便成为现在的维吾尔族人普遍吃的手抓饭了。

Steps to make 手抓饭

  • 1.羊排洗净切成块。
  • 2.洋葱洗净切成小粒。
  • 3.胡萝卜洗净切成滚刀块。
  • 4.大米淘洗干净浸泡20分钟。
  • 5.热锅下油,放入洋葱粒翻炒。
  • 6.炒至洋葱出香味。
  • 7.再放入羊排,翻炒至羊排出羊油。
  • 8.加入胡萝卜继续翻炒,炒至胡萝卜开始变软。
  • 9.加入清水,盐,孜然粉,五香粉炒匀。
  • 10.大火烧开。
  • 11.盖盖转小火炖20分钟。
  • 12.先将胡萝卜和洋葱捞出放在电压力锅内胆的底部。
  • 13.再把羊排放在上面。
  • 14.再把大米均匀的铺在羊排上面。
  • 15.将炖的汤浇在上面,没过大米即可。
  • 16.盖盖煮熟。
  • 17.煮好后打开盖,用铲子铲匀。
  • 18.再盖盖焖10分钟即可。
