【川菜】---川北凉粉
川北凉粉是四川地区的一道风味小吃。
以其微辣鲜香,细致绵软,滑爽利口,红辣味醇而饮誉巴蜀。
川北凉粉之所以如此受人喜爱,不光凉粉好吃,主要还是在拌料上有讲究。
虽然自己在家无法作出正宗的味道,不过花点小心思还是可以山寨一把的,味道一样的诱人无比。

  • 豌豆凉粉1斤
  • 郫县豆瓣酱1勺
  • 豆豉1勺
  • 花椒粉2克
  • 生抽15克
  • 蒸鱼豉油1勺
  • 冰糖2粒
  • 蒜瓣6个

Steps to make 【川菜】---川北凉粉

  • 1.准备好所有的食材。
  • 2.取一个小碗加入生抽和蒸鱼豉油。
  • 3.再放入两粒冰糖。
  • 4.入微波炉中高火1分钟,至冰糖溶化。
  • 5.豌豆凉粉洗净切成小条放入盘中。
  • 6.炒锅烧热油放入蒜末稍加一点盐小火炸香。
  • 7.炸好的蒜油倒入刚才的生抽碗中再加入一勺香醋,少许鸡精拌均匀。
  • 8.炒锅再少倒一些油,放入豆豉和郫县豆瓣酱小火炒香。
  • 9.加入2克的花椒粉继续炒出香味。
  • 10.炒出红油后关火。
  • 11.把蒜油浇在凉粉上。
  • 12.再把炒过的豆豉和豆瓣酱浇在上面,撒上香菜,淋入红油,香油即好。
